Sept Life Update

I'm officially in school and taking my first course, anatomy and physiology. There's a lot of information to learn, but I'm loving it. I'm ignoring arthritis to make flash cards, so that has to mean something haha. I had the first thought last night that I might even want to proceed with my doctorate in the future. But I'm getting way ahead of myself. One course at a time.

I've been eating better because I'm not buying crap anymore. Salads are the new meal of choice for myself and Hubs. The fridge is full of veggies, we're stocked on salad dressing, and dinner is super easy now. It feels great to eat healthy, and it's even better when Hubs tells me he wants salad for dinner. :)

We did have a little headache-causing situation a couple of weeks ago. The next door neighbor was washing dishes when he got distracted by a work call and rushed out the door. He forgot to turn the water off. So Friday night, half our apartment was soaked. Maintenance got a guy in to clean all the water up and replace the carpet padding. I figured it would be much more difficult, but they were fast. I'm glad that we caught it when we did. The only damage for us was a wet box spring, and a night out on the patio dried it out.

My PCOS group is starting a new event called "Creating Goals with Soul" based on the Fire-Starter Sessions by Danielle LaPorte. We are starting with the free mini-book, Workbook o' Fire. My hope is that together we can set real goals and achieve them together. I want them to see the group as a useful means of support for anything. It's hard to fight PCOS alone. It requires hope in the future, belief in yourself, and a lot of self-care. We all need it, so why not support each other while we do it? We'll be working on this for 3 months, and hopefully we'll have the skills necessary to start really making those New Year's. We'll see how it goes. Now I'm off to study!

Cortisol and Leptin...

Photo credit I feel so run down. I felt like this most of last week, and ended up taking 3 days off work due to it. This weekend was better - We went to Houston. We spent several hours enjoying the Downtown Aquarium on Saturday, and I enjoyed my PCOS symposium on Sunday. But as soon as I got in the car to head home, this feeling came back. It was so bad that I tossed my cookies less than an hour after we got on the road. This was definitely not from being car sick. I don't get car sick. I was tired all evening, had stupid issues with my homework, and finally went to be at 2-2:30. I realize that was late, and it could explain why I'm tired, but it doesn't explain the run-down, crappy feeling. I got plenty of sleep last week and still felt this way. I think it could be a cortisol issue. I have high cortisol levels. e-mealz Shopping Trip #1

Last night I went shopping with my e-mealz shopping list. I'm on the Low Carb Any Store for 2 plan. The average is supposed to be around $50. I would agree that $50 is about right for this list. However, I don't shop cheap. I buy organic, grass-fed beef and hormone free chicken. That increased my budget by about $20. I also bought a whole bunch of other stuff, like chips and salsa, extra fruits and veggies, and lunch stuff for Hubs. I'll let you know next week if the recipes are as good as they sound :) I would be super happy if we lived on a farm and I could raise my own chickens. I'm not sure it would save me a lot of money, but it would make me feel better. At least the money I'm spending on the meat I purchase now is going to local farms instead of store chains. I guess I need to start looking for homes for rent out in the country, where I can have some chickens. And goats. Why? Because goats are cute. They jump in the air and dance. My First Giveaway!

My last post was about my decision to start a bakery. I'm very excited about it, and have been getting some fantastic reviews from my taste testers! My menu is small right now, but I am continually working on new recipes to expand it. I'm currently attempting to make a really good gluten free sandwich bread that doesn't have corn, potato, white rice, or soy in it. I hope to have it done by opening day, Nov 1.
