Gluten Free Eggplant and Tomato Pizza

Gluten Free Eggplant and Tomato Pizza
Ingredients
4 small or 1 large eggplant
8 large Roma tomatoes
4 tbsp minced garlic
3 tbsp EVOO
1 tbsp basil
1 small can tomato paste
salt to taste
1/2 batch Bob's Red Mill Gluten Free Pizza Dough
1 cup Italian blend or mozzarella cheese
Optional - add roasted peppers to taste

Directions
Cut 'X' in each tomato and drop in boiling water for one minute. Remove from water and transfer to bowl of ice water. Allow to cool. While the tomatoes are cooling, slice the eggplant into small, bite-size strips. Saute garlic in olive oil in skillet, then add eggplants, sauteing till brown. Peel skin off tomatoes and dice. Add tomatoes, basil, salt and tomato sauce to eggplant mixture, (add roasted peppers if desired) mix and simmer for 20 minutes. Mix should be thick but pourable, like spaghetti sauce. Pre-bake the GF Pizza Dough according to package instructions. Remove eggplant and tomato mixture from stove and spread onto pizza dough. Top with cheese and bake the crust again according to package instructions. Enjoy!

Exercise can be fun!

The weekend is always the best time for me to get my exercise, simply because I don't have to work. Although I love my Wii workout, that's really more for the middle of the week. I've started planning my weekends to include lots of physical activities, without the dread of actual exercise. Weight Watchers stresses that you don't use the term 'exercise', but rather 'activity'. I would agree. 'Exercise' can strike fear into the hearts of even the healthy, whereas 'activity' implies something fun. Cortisol and Leptin...

Photo credit I feel so run down. I felt like this most of last week, and ended up taking 3 days off work due to it. This weekend was better - We went to Houston. We spent several hours enjoying the Downtown Aquarium on Saturday, and I enjoyed my PCOS symposium on Sunday. But as soon as I got in the car to head home, this feeling came back. It was so bad that I tossed my cookies less than an hour after we got on the road. This was definitely not from being car sick. I don't get car sick. I was tired all evening, had stupid issues with my homework, and finally went to be at 2-2:30. I realize that was late, and it could explain why I'm tired, but it doesn't explain the run-down, crappy feeling. I got plenty of sleep last week and still felt this way. I think it could be a cortisol issue. I have high cortisol levels.
